Recipe for Chicken Provencal ~ Bill Clark
Ingredients:
- 8 bone-in, skin-on chicken thighs (you can also use skinless, boneless thighs)
- kosher salt
- freshly ground black pepper
- ½ to ¾ cup all-purpose flour
- 3 tbsp olive oil
- 2 tablespoons herbes de Provence
- 12 cloves garlic, peeled
- 6 medium-size shallots, peeled and halved
- 28 oz. can of diced tomatoes
- ½ cup dates, pitted and coarsely chopped
- 1 cup unstuffed green olives (if the olives are large, cut them in half) (if you cannot find unstuffed olives, cut them in half lengthwise and remove the pimento)
- 1 cup dry white wine (or chicken stock)
Instructions:
- Heat oven to 400° F.
- Combine the flour, salt, and pepper and dredge the chicken in the mixture.
- Heat the oil in a large oven proof pot, and place in the chicken, skin side down. Cook the chicken without disturbing it for 4-5 minutes until golden brown. Flip chicken over and cook until golden brown. Remove the chicken to a plate.
- Add the diced tomatoes, herbes de Provence, garlic cloves, shallots, dates, olives, and wine (or chicken stock) to the pot. Stir, scraping up any pieces on the bottom. Return the chicken to the pot, tucking the chicken under the vegetables and sauce.
- Bring the pot to a simmer, then cover the pot with a lid, and place in the oven. Cook in the oven for 60 minutes.
Serve over rice, polenta, mashed potatoes, or with crusty bread for dipping.
Fall Kids Crafts:
Fall Luminaries
Materials:
- Mason Jars (can usually find them at the dollar store)
- Modge Podge
- Paint Brush
- Fall colored tissue paper (Red, Yellow, Orange, Green)
- Brown Construction Paper
- Scissors (optional)
- Candle (the LED tea lights work great)
Instructions:
- Tear tissue paper and use Modge podge and paint brush to cover the outside of the mason jar.
- Cut or tear out tree shape from brown construction paper, use Modge podge and paint brush to adhere on top of tissue paper.
- Let dry between layers and add final coat of Modge Podge to finish and seal.
- Put candle (or LED) into the jar and enjoy your Fall Luminary!
Turkey Painting
Materials:
- Painters Tape (Blue or Green you can get at craft or hardware stores—even some dollar stores sell it)
- Fall colored paint (Red, yellow, Orange, Brown)
- Paint brush(es)
- Large poster board or large piece of cardboard
Instructions:
- Tape up poster board or cardboard onto the wall (be sure to go all the way around the board full rectangle with the tape).
- Add Tape in shape of half circle at bottom center of the board.
- From the circle add more strips of tape to create pattern (Free hand is perfect don’t stress about how neat its going to look good at the end!)
- Let kids paint all the patterns in.
- Paint eyes and beak into the circle (Older kids can do this themselves, you may want to help younger kiddos).
- Let dry!
- Remove tape and reveal your Turkey Art! Enjoy!
